The espresso is a blend from three different growing regions: Colombia, Sumatra, and Brazil. Currently, this blend is 2/3rd's directly traded, meaning Sam or Tristan went to the farms to negotiate the price and sale themselves rather than fair trade, which involves a third party broker that buys on behalf of a coffee shop. Coffee bean farmers tend to get the best deal when direct trade is made.

The shaping process is quite unique. It involves stretching out the dough by spinning it not unlike a skipping rope, then shaping it quickly using our signature “triple twist” braid in the middle. All pretzels are boiled in a bath of water and baking soda before baking, giving the crust its unique alkaline tang. A sprinkle of coarse kosher salt followed by any other toppings precedes a quick bake at high temperature. The result is a soft, chewy, pretzel with a light crust and a hint of sweetness.

We are huge fans of the lasagna and the fettuccine. Their pizza is a traditional Sicilian-style using their focaccia bread base then topped with seasonal and tasty ingredients. This store is a chocolate lovers dream! Owner David Mincey sources over 350 bars from around the world made my small chocolatiers, many hard-to-find gems and even some locally made! They also create canned goods with their sister company Circle Canning, using ingredients from local farmers.

Your chocolate sample with change depending on what is available but it will always be vegan.

Important Information

  • Keep your foodie passport safe like you would a real one. We can’t replace lost passports and this is the only way to acquire your tasting samples.
  • The passport is valid for 2 weeks once you pick-it up from our kiosk so use it up! After the expiration date the foodie samples are no longer valid.
  • If you choose to complete the tour in one-day, plan for at least 1-hour to complete. Please note that most places inside the market are closed on Sunday.
  • You will need headphones to listen to the commentary on your phone. Bring your own or we sell them for $7. You could also play the tour on your phone speaker.
  • You will need a fully charged cell phone to run the app. Please charge your cell phone before starting the tour, you are welcome to charge it at the kiosk.
  • Please note that you will need to know your Apple ID in order to download the APP. You may want to have this information handy before you come to pick-up the passport at the kiosk.
  • Hours and times of food businesses change, especially on holidays. For the most up-to-date information please contact the business directly.
  • The most ideal time to do the tour is Monday-Saturday 11am-5pm. Please note that many of the restaurants included are very busy at lunch hour (11am-1pm). You will have to wait in line if you decide to go at lunch.
  • The Victoria Public Market is wheelchair accessible.
  • This is not a VIP access card that lets you jump the queue. You may have to wait in line or wait for a table at certain spots. We recommend visiting during non-peak times. Sorry, even we have to wait sometimes!
  • The answer is yes, you should definitely leave a gratuity. These are small businesses working incredibly hard and it is our local custom to tip wait staff, counter staff, and really anyone that flashes a smile and serves you food + drinks. A Toonie or Loonie will do.
